Beetroot Carrot Soup

Beetroots and carrots are rich in fiber, vitamin C, and vitamin A. This is a simple yet tasty and nutritious soup.
Ingredients:
1 medium size beetroot
2 carrots
2 tomatoes
few leaves of fresh cilantro/coriander
3-4 cloves of roughly chopped garlic
1 small piece of ginger
3-4 glasses of water
1/4 tsp crushed black pepper
salt to taste
Method:
Wash and peel the skin of the beetroots. Chop beetroots, carrots, and tomatoes into medium pieces. Put in a pressure cooker. Add cilantro leaves, garlic, ginger, salt, and water.
Pressure cook on a medium flame until 6-8 whistles. Switch off the flame. Let it cool down and open the cooker lid when it's safe. Allow it to cool down completely and then puree it in the blender.
Add this soup back to the cooker. If the soup looks thick, add more water and boil it for a few seconds. Add black pepper, garnish with a cilantro leaf, and enjoy the warm, nutritious soup!
