Beetroot Tomato Soup

Beetroots are highly nutritious. They are rich in fiber, vitamin C, and many other minerals. Tomatoes are also high in vitamin C.
Ingredients:
2 medium size beetroots
4 tomatoes
3-4 cloves of roughly chopped garlic
1 small piece of ginger
3-4 glasses of water
1/4 tsp crushed black pepper
salt to taste
Method:
Wash and peel the skin of the beetroots. Chop beetroots into medium and tomatoes into big pieces. Put in a pressure cooker. Add garlic, ginger, salt, and water. Pressure cook on a medium flame until 6-8 whistles. Switch off the flame. Let it cool down and open the cooker lid when it's safe to open. Allow it to cool down completely and then puree it in the blender.
Add this soup back to the cooker. Add more water if the soup looks thick and boil it for a few seconds. Add black pepper and enjoy the nutritious soup!
