Pumpkins are rich in vitamin A and used in a variety of ways. This pumpkin soup recipe is simple and easy to make.
Ingredients:
250 gm of pumpkin
3-4 cloves of roughly chopped garlic
1 small piece of ginger
4 glasses of water
1 tsp thyme
1/4 tsp crushed black pepper
salt to taste
1/2 tsp butter (optional)
Method:
Wash and peel the skin of the pumpkin, remove the seeds, and chop it into big pieces. Put it in a pressure cooker. Add garlic, ginger, salt, and water. Pressure cook on a medium flame until 5-6 whistles. Switch off the flame. Let it cool down and open the cooker lid when it's safe to open. Allow it to cool down completely and then puree it in the blender.
Add this soup back to the cooker. Add more water if the soup looks thick and boil it for a few seconds. Add black pepper and thyme. Add butter if you like. Enjoy the hot pumpkin soup!
