Bottle gourd (Lauki) Kheer

Ingredients:

1 medium-sized bottle gourd

2 tbsp powdered rock sugar

a handful of cashews and raisins

1/2 litre milk

1/2 tsp cardamom powder

1 tsp ghee

Method:

Peel and grate the bottle gourd. Alternatively, you can cut it into big chunks and coarsely blend it in the mixer. In a pan, add ghee and then stir bottle gourd on a low flame and cover for 5-6 minutes stirring in between.

Add the milk, stir, and cover with a lid for 10-12 minutes stirring in between.

Add cardamom powder, cashews, and raisins. You may put dry fruits of your liking. If you need thick kheer, cook for some more time without the lid. Switch off the gas. Add rock sugar, mix, and let it cool down. Kheer can be served warm or cold. This dessert can also be had during fasting.
