Carrot halwa - the most awaited dish of winter!

Ingredients:

1 kg red carrots

1 big cup of milk

3/4 cup of dry fruits like raisins, crushed almonds, and cashews

1/2 tsp crushed green cardamom powder

1 cup jaggery powder/sugar or as per taste 

2 tbsp ghee

Method:

Wash the carrots, peel them, and chop them into big pieces. In a dry blender, coarsely grind the carrots.

In a heavyweight pan, add milk and carrots. 

Cover the lid and let it cook on a slow flame for about 1/2 hour. Keep stirring in between. 

Open the lid and let the mixture become dry. 

Add ghee, dry fruits, and cardamom powder at this time. 

Stir the mixture. Add jaggery powder or sugar. Mix well. Let it cook for a while, do not cover it. Switch off the flame when the sugar melts completely. The aroma of halwa spreads quickly everywhere and I bet no one can resist this dessert. Enjoy warm or cold halwa as you like it :)
