Maize (Makki) Roti

These rotis are made with maize (makki) flour which is high in fiber and is gluten-free.

Ingredients:
2 cups maize flour
hot water to knead the dough

Method:
Take the maize flour and add little hot water at a time. I skip salt and oil in the dough as the rotis come out well without adding these too. Slowly knead the dough, and add water as required. Divide the dough into equal portions, roll into circles by applying little dry maize flour, and put on a flat pan for a few seconds, flip and cook directly on the flame till there are light brown spots on the roti. Adjust the flame as needed. Makes about 8-10 rotis.

Enjoy the maize (makki) rotis with mustard greens (sarson saag) veggie. Add a little butter to the roti, if desired.
