Moringa or Drumstick leaves are rich in vitamins, minerals, amino acids, and antioxidants. It can be incorporated into a regular diet by adding them to roti, rice, and lentils, as a green veggie, or in powder form, etc.
Ingredients: (for 4 people)
For rice:
1 lemon juice
4 cups small size rice
1/2 tsp turmeric powder
Salt as per taste
Small bunch of moringa(drumstick) leaves
For tempering:
1.5 tsp mustard seeds
1.5 tsp white split urad dal
1/4 tsp asafoetida (hing) powder
2 tablespoon peanuts
2 whole red chilies
15-20 curry leaves
1 tsp sesame oil
Method:
Take a small bunch of Moringa (drumstick) leaves. Take the leaves and discard the stems altogether. Wash and chop the leaves.
Cook rice with salt, turmeric powder, and water. Let it cool.
Put sesame oil in a small pan on medium heat and let it heat. Add hing and white urad dal and stir till the urad dal becomes light brown. Add mustard seeds and let them crackle. Then add peanuts, whole red chilies, moringa leaves, and curry leaves, and fry everything together on a low flame until the drumstick leaves get crispy. This should take about a minute. Switch off the gas. Add this and lemon juice to the cooked rice, and stir the rice well.
Add this and lemon juice to the cooked rice, and stir the rice well. It can be served with any vegetable curry, rasam or sambhar.
