Finger millet (Ragi) is rich in calcium and many other important nutrients required for the body. Paneer and Moong sprouts are rich in protein. The homemade oil-free calcium and protein-rich ragi dosa with paneer filling, coriander& coconut chutney, and boiled moong sprouts make it a healthy breakfast item.

Ingredients: (for 1 person)

Ragi Dosa Batter

100 gm paneer filling

1 cup boiled moong sprouts

1/2 green capsicum

1 green chili

coriander leaves

lemon juice

1/2 tsp garam masala powder

1/2 tsp cumin powder

pepper powder as per taste

salt to taste

Method: 

Make oil-free ragi dosa with the homemade ragi batter.

For Paneer Filling - Crumble the paneer with a spoon. Chop and add capsicum to it. Add salt, pepper, garam masala powder, cumin powder, and chopped green chili and mix well.

Add the filling to the dosa and fold the dosa.

Cut the dosa into halves. Let it get crisp and switch off the gas. 

Boiled moong sprouts - Prepare the moong sprouts. Add 1 cup sprouts and 1 cup water, 1/2 tsp salt, and cook till 1 whistle. Switch off the gas. Let the cooker cool down completely. Strain the moong on a strainer and transfer it to a separate bowl.  Sprinkle lemon juice, salt, coriander leaves, and chopped green chili. 

Enjoy the stuffed, thin, oil-free, healthy paneer-filled ragi dosa with coriander- coconut chutney!
