Vermicelli is available in different varieties like wheat, refined flour, and millet. Vermicelli comes as both roasted and not roasted. If you have the not roasted one, it's good to dry roast before using it. It gives a good aroma and tastes better. This dish is made from roasted wheat vermicelli and is a good breakfast or even meal item. The choice of veggies can be as per your liking.

Ingredients:

2 cups roasted vermicelli

1 big onion chopped

2 tomatoes chopped

1 green chili chopped

1 tbsp roasted and crushed peanuts

1 potato chopped

1 small cup of green peas

2 carrots chopped

1 tbsp coriander leaves

1 tsp mustard seeds

10-15 curry leaves

salt to taste

lemon juice of a half lemon

1 tbsp sesame/coconut oil

Method:

Take at least 5 times the water, so for 2 cups of vermicelli, take 10 cups of water. Boil the water, add a few drops of oil,(so vermicelli will not stick) a little salt, and vermicelli, and when the vermicelli is cooked, drain the water using a colander. In a pan, add mustard seeds and let it crackle. Add curry leaves and onion and let it fry till the onion becomes light brown in color. Add green chilies, potato, carrots, and peas and stir well. Add tomatoes and salt. Stir and cover for a few minutes till the veggies are cooked. You may add a few drops of water if the veggies become fry while cooking. Add vermicelli, peanuts, coriander leaves, and lemon juice, and mix well. Switch off the flame. Serve hot.
