Semolina (rava or sooji) chilla made from durum wheat is a healthy savory pancake that tastes great and is easy to make.

Ingredients:

2 cups semolina

1 cup water

1 cup curd

1 onion chopped

1 tsp grated ginger

2 green chilies chopped

1 tbsp chopped coriander leaves

salt to taste

1/2 tsp black pepper powder

coconut/sesame oil for brushing

Method:

Take semolina in a bowl, add water and curd, and mix well with a whisk. Let it rest for 20 minutes so that the batter becomes soft.

Add the rest of the ingredients except oil and mix well. Add a little water if the batter seems thick. Skip the green chilies if you don't like them spicy.

On a flat pan, apply oil with an oil brush and add 2 ladles of the batter, and spread it with the ladle till it becomes thin. Let it cook for a minute on a mid-high flame till it is golden brown in color.

Drizzle a few drops of oil, if you wish, flip it, and cook it on the other side. Serve with any chutney.
