Hummus is a healthy protein-rich condiment that is commonly eaten with pita bread and can also be used as a spread or in sandwiches and wraps.
Ingredients:
1 cup chickpeas
5 cups water
2 garlic pods
2 tbsp lemon juice
4 tbsp roasted sesame seeds
1 tsp salt
1.5 tbsp extra virgin olive oil
a pinch of red chili powder (or more for spicy hummus)
Method:
Wash and soak chickpeas in water for 7-8 hours. Drain this water. Add water and salt and pressure cook on a low flame for about 20-25 minutes. Open the lid only when the cooker has cooled down completely.
Check by pressing with your fingers. Chickpeas should be very soft.
Drain the water and in the mixer, put the chickpeas, olive oil, garlic, and sesame seeds. If you need a little spicy hummus, add a 1/4 tsp red chili powder too.
Blend well, and transfer the mixture to a bowl, add lemon juice, and mix well. You can check salt at this stage and add more if needed.
Drizzle remaining olive oil, and, sprinkle some red chili powder, and serve.
