In a bowl, add zucchini, and onion. I grill the tomatoes separately as they tend to leave the water. Add the rest of the above ingredients to both zucchini and tomatoes, and mix well.

In a grill pan, on a high flame, add veggies in batches. When cooked on one side, flip on the other side. Do not overcook the veggies else the dish will be soggy.

Sprinkle feta cheese or shred the cheese cube on top. It can be served hot or warm. This dish is always a hit and tastes good every time. Serve it as salad, a side dish, or with wraps.
