Stuffed Soya Mushrooms

Mushrooms are rich in protein, vitamin B, vitamin D, and antioxidants. And soya too is rich in protein. This is a simple and healthy stuffed soya mushroom recipe that can go as an appetizer or a side dish. Instead of soya, minced meat can be used.
Ingredients:
1 box of white mushrooms
1 cup soya granules
3-4 cloves of minced garlic
1 onion chopped
1 chopped green chili (optional)
2 tsp chopped coriander leaves
1 tsp vinegar
2 tsp crushed walnut
1 tsp oregano
1/2 tsp crushed black pepper
salt to taste
shredded mozzarella cheese
olive oil
Method:
Wash mushrooms, remove the stems and chop them into very small sizes. Wash soya granules and soak them in warm water for about half an hour. Drain the water thoroughly and keep the granules aside.
In a cooking pan, add onions and garlic in little olive oil. Add chopped stems and soya granules. Stir fry well. Add coriander leaves, green chili, vinegar, walnut crumble, oregano, salt, and pepper. Let it cool. The filling is ready.
Fill the mushrooms with this mixture.
Add mozzarella cheese on top of all the mushrooms.
Add little olive oil to the same pan in which the filling was made to enhance the flavor.
Arrange the mushrooms on the pan, cover them with a lid, and cook for a couple of mins on a medium flame. Keep a check so as to not overcook else the mushrooms may break like some of mine did :)
Serve as a side dish or appetizer.
