Veggie Soya Momos

Ingredients:

For filling -

2 cups soya granules

1 small cabbage

2 carrots

2 tsp crushed garlic

1 tsp grated ginger

2 green chilies chopped

1 tbsp soy sauce

1/2 tsp black pepper powder

salt to taste

For dough -

2 cups whole wheat flour

1 cup all-purpose flour

1 tsp sesame oil

1/2 tsp salt

Water to knead the dough

Method:

Get the dough ready first as it gets to rest for a while till the time the filling gets ready. 

Take the above ingredients for the dough

Add a little water at a time and knead it well. The dough shouldn't be very hard or very soft. Cover with a cloth or a lid 

Soak soya granules in hot water for about 15-20 mins. Strain the water using a colander. Make sure to squeeze the water completely of the soya 

Chop cabbage and carrots into big pieces and then coarsely grind them. Squeeze the water completely by taking the mixture little by little in your hands and pressing it hard to remove any water in them 

Add the rest of the ingredients and mix well 

Take a small round and roll it into the thin round as shown below. Place filling in the center. Hold up at a place and start folding one by one as shown. It gets done in one flow. In the end, all the folds join at the top. Seal the top firmly

Similarly, prepare the other momos. Brush the steamer with a little oil. Place the momos over it. Cover with a lid and let them cook for about 8-10 minutes till they get cooked and become shiny. Do not overcook them, or else they will become hard. You can use 2 steamers to speed up the process of making momos in batches 

Enjoy hot momos with chili garlic chutney or schezwan sauce
