These quick and easy-to-prepare tacos made with veggies can be served as a side dish or as an appetizer at parties.

Step 1: Add oil to a pan. Fry the onion till brown in color. Add all the veggies and give it a nice stir on a high flame. Cover the lid and let it cook for a minute on a medium flame.

Step 2: Let the mixture cool down. Add salt, and seasoning mix, and stir well.

Step 3: Gently remove tacos from the box else there's a risk of breaking the shells. Some of my shells broke while taking it out as you can see in the pic below :)

Fill the mixture with taco shells and add shredded cheese on top. Put the tacos in the microwave or on a pan on the stovetop for a minute until the cheese melts. The quick and yummy tacos are ready to enjoy!
