Tomato Spinach Pizza

This is a healthy alternative to store-bought pizzas, tastes equally good and it's full of fiber, vitamins, iron, and calcium.

Ingredients:

For 1 thin-crust medium size pizza -

1 whole wheat tortilla/roti

8-10 spinach leaves

8-10 cherry tomatoes

1/2 cup shredded mozzarella cheese

1-2 tsp any pizza sauce

1 tsp oregano

1/2 red chili flakes (optional)

1/2 tsp olive oil

Method:

Make fresh whole wheat tortilla (Roti) first. Let it cool down.

Wash spinach leaves and cherry tomatoes and cut the tomatoes in halves.

Spread the pizza sauce on the tortilla.

Place spinach and tomatoes on over that. Sprinkle cheese, oregano, and chili flakes on top of that.

On a flat pan, spread the olive oil with a silicon brush and place the pizza on top. Cover with a lid and cook on medium heat until the cheese melts. Make sure that the pizza doesn't get burnt from the base so adjust the flame accordingly. If you want crispy pizza, switch off the flame and leave the pizza on the pan for a few minutes. Cut the pizza in any desired shape.
