Veggie Quesadillas

Ingredients:
10-12 whole wheat homemade roti/chapati/tortillas
Cheese chili or jalapeno chili sauce for the spread
For filling -
2 cups of capsicum, cabbage, and carrots cut lengthwise
1 cup corn kernels
1 onion cut lengthwise
1 whole garlic chopped
Garlic chili sauce
Oregano
Salt, and black pepper to taste
1 cup mozzarella cheese diced or grated
sesame or olive oil for sauteing veggies
Method:
For filling -
Put a little oil in a wok. Add garlic and onions. Let it get brown a bit. Add the veggies and stir. Cover the lid and cook only for a couple of minutes. Open the lid and saute on a high flame for a few seconds. Switch off the gas. Let it cool down. Add the sauce, salt, and spices. Add cheese in the end and mix.
Take a roti/chapati/tortilla and spread the cheese chili sauce on it. Add the veggie mix on half the side.
Fold the tortilla. Prepare 2-3 quesadillas like this.
Heat the pan and without adding any oil, put these tortillas on the pan on medium-high heat. If you like to spray some oil or butter on it, you can but to make it healthier you can skip it. When these get slightly brown, flip and cook till they get a little brown and the cheese inside these melt.
Prepare the rest of the quesadillas in the same way. Enjoy the hot, crunchy quesadillas with salsa or chutney.
