Whole wheat walnut mini pancakes

Ingredients:

1 cup whole wheat flour

2 cups warm milk

1/2 tsp baking powder

a pinch of baking soda

1/2 tsp cinnamon powder

1/2 tsp cardamom powder

a few dried berries as topping

4-5 chopped walnuts

jaggery powder as per the desired sweetness

2 tsp sesame oil/olive oil for brushing 

Method:

Mix all the ingredients well except the berries. Put 1 tsp oil in the batter. Let the batter rest for 10 minutes. If the batter appears thick, you may add some more milk. 

Take a mini dosa pan and heat on a mid-high flame. Use the remaining 1 tsp oil to brush for the pancakes. Pour the batter with a ladle. The bubbles will appear slowly. Let the pancakes cook and flip them. Cook on both sides till golden brown.

Top with berries or the fruits of your liking and serve hot. Makes about 10 mini pancakes. 

Note - you may replace dairy milk with any non-dairy milk.
