This is a simple soya burrito recipe that can be made at home with fresh or leftover brown rice, whatever veggies you have available, any seasoning mix, cheese or no cheese, and homemade whole wheat tortillas. Try to use fresh homemade tortillas instead of store-bought ones. If you have kidney beans ready, you can surely add them. I made this one without it as I used soya granules as a protein substitute. This is a healthy and tasty burrito dish that can be enjoyed for any meal.

Step 1: I made fresh tortillas (roti) at home with whole wheat flour dough.

Step 2: Prepare rice filling. I used cooked plain brown rice, fried some chopped onions, garlic, and tomatoes, added mexican seasoning mix, corn, soaked soya granules, chili garlic sauce, salt, and black pepper powder. You can add any veggies and dry spices or seasoning mix.

Step 3: Take a tortilla, apply a thin layer of cheesy jalapeno or any sauce of your liking, add 2 big tbsp of rice filling, and 1 tbsp of mozzarella cheese, and fold it like a burrito. Prepare the rest in a similar way. You can add some salad leaves, onions, tomatoes, etc instead of cheese (if you don't like a cheesy burrito), and skip Step 4.

Step 4: Heat 1 tsp ghee or olive oil on a pan and heat all the tortillas on both sides. Enjoy hot burritos with salsa/chutney.
